Η χαρουπιάCeratonia siliqua)( είναι δέντρο μακρόβιο, πολύγαμο, μόνοικο ή δίοικο, ιθαγενές της Μεσογείου. Εχει φλοιό καστανόφαιο, λεπτό, κόμη πυκνή, συνήθως σφαιρική, φύλλα πτερωτά με 4 – 10 φυλλάρια ακέραια, δερματώδη, βαθυπράσινα και γυαλιστερά από πάνω, ωχροπράσινα από κάτω, άνθη με βαριά οσμή, χωρίς πέταλα, μικρά, σε μασχαλιαίους ή πλευρικούς κοκκινωπούς βότρυες, δίκλινα συνήθως, με κάλυκα μικρό, πρασινωπό, πεντάλοβο, πέντε στήμονες, μακριούς στα αρσενικά άνθη, κοντούς και, κατά κανόνα, άγονους στα θηλυκά ή ερμαφρόδιτα. Καλλιεργείται εύκολα και ευδοκιμεί σε όλα τα εδάφη εκτός από τα υγρά και τα άπορα. Η καρποφορία της αρχίζει συνήθως το 6-7 έτος και συνεχίζεται για πολλά χρόνια. Η ωρίμανση του καρπού διαρκεί σχεδόν ένα χρόνο, από το Φθινόπωρο που γίνεται η ανθοφορία μέχρι τα τέλη Αυγούστου του επόμενου έτους που αρχίζουν να πέφτουν οι ώριμοι πια καρποί. Τα φύλλα της είναι σύνθετα, σκληρά, ωοειδή με λείες παρυφές και σχηματίζουν πυκνό φύλλωμα. Μπορεί να φτάσει σε ύψος και τα 13 μέτρα, βρίσκεται σε όχθες ποταμών και παράκτιες περιοχές της Μεσογείου είναι δε γνωστή και με το όνομα ξυλοκερατιά, ενώ στην Κύπρο ως "τερατσιά", από την αρχαιοελληνική λέξη κεράτιον, για το χαρούπι. Από τη λέξη κεράτιον προέρχεται και η λέξη καράτι, γιατί το βάρος του σπόρου των χαρουπιών ορίστηκε ως η πιο μικρή μονάδα μέτρησης για χρυσό και πολύτιμους λίθους. Τα άνθη της είναι μικρά, πράσινα, χωρίς πέταλα. Γνωστό από την αρχαιότητα όπου το καλλιεργούσαν για τους καρπούς του τα χαρούπια ή ξυλοκέρατα.
Ο καρπός της χαρουπιάς είναι λοβός πεπλατυσμένος. Τα χαρούπια είναι μακριά, στριφτά και σκληρά πράσινου χρώματος όταν είναι άγουρα και ξυλώδη εξωτερικά ,καστανού χρώματος όταν είναι ώριμα. Η σάρκα του ώριμου καρπού περιβάλλει μέχρι και είκοσι καστανόχρωμα και πολύ σκληρά φακοειδή σπέρματα, διατεταγμένα κατά μήκος του. Είναι σακχαρώδης και έχει ευχάριστη, γλυκιά γεύση.
Η χαρουπιά είναι είδος δασικό, γεωργικό, βιομηχανικό και καλλωπιστικό. Το ξύλο της δίνει ξυλάνθρακες αρίστης ποιότητας, το καρδιόξυλό της χρησιμοποιείται στην επιπλοποιία, την ξυλογλυπτική, την τορνευτική και τη βαρελοποιία ενώ ο φλοιός και τα φύλλα της στη βρυσοδεψία και τη βαφική. Τα χαρούπια χρησιμοποιούνται ως ζωοτροφή και στη παρασκευή οινοπνευματωδών ποτών. Ακόμα αλευροποιούνται και χρησιμοποιούνται στη παρασκευή ενός θρεπτικού αλευριού κατάλληλου για βρεφικούς κοιλόπονους και παιδικές γαστρεντερίτιδες. Από τα σπόρια τους εξάγεται μία κολλώδης ουσία (κόμμι) χρήσιμη στη χαρτοβιομηχανία καθώς και ως στερεωτικό σε διάφορα τρόφιμα. Το ξύλο της χαρουπιάς χρησιμοποιείται σε ξύλινες διακοσμήσεις.
Στην Ελλάδα βρίσκεται αυτοφυής σε πολλές νησιώτικες περιοχές και κυρίως στη Κρήτη αλλά καλλιεργείται και σε φυτώρια για τον καλλωπισμό δρόμων και πάρκων. Στην Κύπρο καλλιεργείται εδώ και χιλιάδες χρόνια, και το 90% της παραγωγής εξάγεται σε διάφορες μορφές (χαρουπάλευρο, ολόκληρος καρπός, χαρουποπυρήνας, αλεσμένα, γόμα σε Ιταλία, Αγγλία, Αμερική, Ισπανία, Αυστραλία, Ιαπωνία, και Αίγυπτο.
